Well-known chef and restaurant owner Jack Flaws is always thinking. When the economy began to tank, Flaws, who owns Jack's Saybrook Steak and the seasonal Harbor One, both in Old Saybrook, decided it was time to diversify again. He wanted to make sure he was offering dining that suited the times. And so Jack Rabbit's was born.
